Coconut is one of my favorite flavours, be it on its own or especially when found in chocolate or pastries. In terms of beer I've always enjoyed a good coconut sweet stout and have also always wanted to brew one myself. Since the summer heat was still well settled in at the time this beer was brewed, I traded the stout for a refreshing IPA. With about 20% flaked oats in the malt bill, as well as a lactose addition, this creamy beer was the first of its kind for me and I'm very pleased with the first results. The coconut was coming on just a bit too strong at first but it settled down well after about a week of conditioning. One thing that will still need tweaking is the hop addition schedule and whirlpooling at lower temperatures to reduce a little bit of that bitterness kick.
